Healthy Muffins
It pretty much looks like we, women, are always busy wit our weight. We are always looking for healthy, but still delicious food. We found the perfect replacement for the lovely - but not so healthy - muffins. Think of it as an egg and vegetable omelet, in the shape of a muffin!
The ingredients you need for 24 muffins:
- 1 red bell pepper
- 2 roma tomatoes
- a good handful of fresh basil leaves
- 3-4 scallions (green onion)
- 6 whole eggs + 4 cups of egg whites
- if you like you can add more vegetables
